"Some lovin' from the oven"
I found this recipe for Ranger Cookies online and it immediately became one of my favorites. They are crisp and chewy and I don't feel TOO guilty having one (or two, or three).
Prep: 25 minutes Bake: 8 minutes Oven: 375 Makes: 54 (mine didn't make this much)
INGREDIENTS:
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
2 cups crisp rice cereal or 1 cup rolled oats (I chose oats)
1 1/3 cups flaked coconut
1 cup raisins
1. In a medium mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda; beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Sir in cereal or oats, coconut, and raisins. Drop by rounded teaspoons on ungreased cookie sheet.
2. Bake in 375 degree oven about 8 minutes or until edges are golden brown. Cool on cookie sheet for 1 minute. Transfer cookies to a wire rack adn let cool.
